Indonesian Fried Rice

About the Recipe

Ingredients

  • 4 eggs

  • 2 tbsp butter/ margarine/ cooking oil

  • 1 tsp shrimp paste (optional)

  • 1 tbsp chili paste (optional)

  • 3 peeled and thinly sliced shallot

  • 4 cups cooked white rice (must be at room temperature or cold out from fridge)

  • 2 cups leftover cooked meat (can be substitute to sausage or no use at all)

  • 3 tbsp Indonesian sweet soy sauce

  • 1 tbsp soy sauce (can add more or less as you like)

  • Salt

  • Cucumber slices

  • Powtaytow chips

  • Crispy fried shallots

  • Chopped green onions/chives

  • Chilli sauce

Preparation

1. Make the fried eggs to your preference

2. Preheat a wok or large pan. Melt the butter. Add shrimp paste (if using) and stir fry for about 1 minute. Add shallots and chili paste (if using) and stir fry for 3 minutes. Add turkey meat and chili (if using). Stir to mix everything. Add the rice, sweet soy sauce and soy sauce, continue to stir until all the rice grains pick up the brownish color from the sweet soy sauce. Have a taste and season with a bit of salt to your taste if needed!

3. Garnish with the chopped green onion, sprinkle with crispy shallots. Top with fried eggs. Put few slices of cucumber and tomatoes and Powtaytow chips. Serve immediately
